Useful Weights & Measures

1 1/2 pounds = 2 pints or 1 quart
1 small basket = 1 pint
1 pint = 3 1/4 cups whole berries
1 pint = 2 1/4 cups sliced berries
1 pint - 1 2/3 cup pureed berries
1 cup = about 4 ounces

Strawberry Butter

Strawberry butter is great served on toast, warm biscuits, scones or bagels.

1 cup fresh strawberries
¾ cup powdered sugar
1 stick butter, softened
½ tsp. vanilla


Wash and hull berries. Let dry.

Put butter, sugar, vanilla berries in food processor.

Mix well.

Easy Strawberry Pie

Makes 1 Pie

1 9” baked pie shell
1 cup sugar
1 cup water
1 qt. fresh Gettings Strawberries
1 small box strawberry gelatin
3 Tbsp. cornstarch


Boil water, sugar & cornstarch until starts to thicken.

Add strawberry gelatin and stir.  Let cool.

Add strawberries either whole or sliced.

Refrigerate for several hours to set.

Strawberry Daiquiri

The daiquiri is a classic strawberry cocktail made for hosting guests, a party, or just because. This recipe is from the popular strawberry recipe book. Best part is it can be made with fresh or frozen berries.

Makes 1 serving

4 - 6 whole unsweetened strawberries, washed & hulled (fresh or frozen)

1 1/2 oz. light rum

1 tbsp lime juice

1 tsp sugar

4 - 5 ice cubes


Combine strawberries, rum, lime juice and sugar in blender. Blend until strawberries are pureed.

Add ice cubes and blend until mixture is slushy. (Skip ice cubes if using frozen strawberries)


Garnish using a fresh whole strawberry with hull.

Strawberry Lemonade

Makes 2 servings

1/2 cup sliced strawberries

1 tbsp. sugar

2 tbsp. frozen lemonade concentrate

1/2 cup water

4 ice cubes


Combine all ingredients, except ice cubes, in blender. Blend until smooth.

Pour into glasses. add ice cubes and garnish with floating strawberries if desired.

Fluffy Strawberry Pie with Pretzel Crust


3/4 cup boiling water

1 package strawberry-flavored gelatin

1 tsp. grated lime peel

1/4 cup lime juice

1 1/2 cups whipping (heavy) cream

3/4 cup powdered sugar

2 cups strawberries, slightly crushed

Chocolate-covered strawberries, if desired

Pretzel Crust

1 1/4 cups crushed pretzels

1/4 cup granulated sugar

1/2 cup butter or margarine, melted


In medium bowl, mix all crust ingredients. Press mixture firmly against bottom and side of 9-inch glass pie plate.

In large bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Stir in lime peel and lime juice. Refrigerate about 1 hour or until very thick but not set.

Beat gelatin mixture with electric mixer on high speed about 4 minutes or until thick and fluffy; set aside. In chilled large bowl, beat whipping cream and powdered sugar on high speed until stiff peaks form. Fold whipped cream and crushed strawberries into gelatin mixture. Pour into crust.

Refrigerate about 8 hours or until set. Garnish with chocolate-covered strawberries. Store covered in refrigerator.
